On one side, nailed\r\nagainst the wainscot in a row, were the four knaves of cards, each Jack\r\nputting his best foot foremost as usual. What these signified I never\r\nheard.\r\n\r\nBut such ample cheer! Such a groaning table! Such a superabundance of\r\nsolids and substantial! Was it possible that sailors fared thus?—the\r\nsailors, who at sea live upon salt beef and biscuit?\r\n\r\nFirst and foremost, was a mighty pewter dish, big as Achilles’ shield,\r\nsustaining a pyramid of smoking sausages. This stood at one end; midway\r\nwas a similar dish, heavily laden with farmers’ slices of head-cheese;\r\nand at the opposite end, a congregation of beef-steaks, piled tier over\r\ntier. Scattered at intervals between, were side dishes of boiled\r\npotatoes, eggs by the score, bread, and pickles; and on a stand\r\nadjoining, was an ample reserve of every thing on the supper table.\r\n\r\nWe fell to with all our hearts; wrapt ourselves in hot jackets of\r\nbeef-steaks; curtailed the sausages with great celerity; and sitting\r\ndown before the head-cheese, soon razed it to its foundations.\r\n\r\nToward the close of the entertainment, I suggested to Peggy, one of the\r\ngirls who had waited upon us, that a cup of tea would be a nice thing\r\nto take; and I would thank her for one. She replied that it was too\r\nlate for tea; but she would get me a cup of _“swipes”_ if I wanted it.\r\n\r\nNot knowing what _“swipes”_ might be, I thought I would run the risk\r\nand try it; but it proved a miserable beverage, with a musty, sour\r\nflavor, as if it had been a decoction of spoiled pickles. I never\r\npatronized _swipes_ again; but gave it a wide berth; though, at dinner\r\nafterward, it was furnished to an unlimited extent, and drunk by most\r\nof my shipmates, who pronounced it good.\r\n\r\nBut Bob Still would not have pronounced it so; for this _stripes, as I_\r\nlearned, was a sort of cheap substitute for beer; or a bastard kind of\r\nbeer; or the washings and rinsings of old beer-barrels. But I do not\r\nremember now what they said it was, precisely. I only know, that\r\n_swipes_ was my abomination. As for the taste of it, I can only\r\ndescribe it as answering to the name itself; which is certainly\r\nsignificant of something vile. But it is drunk in large quantities by\r\nthe poor people about Liverpool, which, perhaps, in some degree,\r\naccounts for their poverty.\r\n\r\n\r\n\r\n\r","title":"Chunk 4"},"relationships":[{"peer":"01KG8AJQSBTJ3R1DDGA61Q68PK","peer_type":"chapter","predicate":"in"},{"peer":"01KG89J1GP71YDJ60P8SRH97MF","peer_type":"file","predicate":"extractedFrom"},{"peer":"01KG89HMDZKNY753EZE1CJ8HZW","peer_type":"collection","predicate":"collection"},{"peer":"01KG8AKYJD2ESE6DF45MVN5QTG","peer_type":"chunk","predicate":"prev"}],"ver":2,"created_at":"2026-01-30T20:48:21.069Z","ts":"2026-01-30T20:48:29.231Z","edited_by":{"method":"manual","user_id":"01KFF0H3YRP9ZSM033AM0QJ47H"}}
